I can't seem to figure out what the three faces in the UI do (the smile, frown, and neutral). I would assume they would change the mood of the people in the scene, but it doesn't seem like that's happening

The expression options are for the purpose you mention and each uses select expression morphs that blend randomly during the sex animations. Both moods are different but still share some morphs to allow a more realistic behaviour. The neutral is for no random expressions in case you want to use a plugin for that purpose.
The mood has to be selected before an animation is running, and the chosen mood will be used for any animation you choose onwards unless you change to another or use a story intro animation if available.
Also, on NEXT-based scenes with intros like "A passing grade" or "Make it up", when you start a intro story it also sets the suitable mood for the story and subsequent sex animations.
