When I grab joints and move them in play mode, they always spring back, sometimes even breaking the pose. Is there a way to have the joints behave like in edit mode where they stay in place after being released?

If Timeline is in control of those joints, you can't move them without going into Timeline and changing the nodes' positions there. It doesn't work the way you suggest. Timeline animations are easy to break. Proceed with caution. Read the Wikis, go through the tutorials on Timeline. If something else is controlling the motion, like an animation pattern, or a scene animation, then it may be impossible to change it.
