With a midrange pc for using in VR, what amount of var files should I try to stay below? And does it hurt performance if I have a LOT of unpacked files from vars in the custom folder?

VAR themselves do not hurt VAM, or unpacked either. The type of content does. Lots of morphs, lots of "listable" assets (hairs, clothings etc) do.
Giving you a number would be arbitrary, just maintain and keep your VAM clean of content you don't use.

But if you really want a number, having a VAM that is 3 times the size of the biggest games on the market might already slow down your experience ( so around 110 to 150gigs x 3 > around 500gigs )... IF they are all morphs/hairs/clothings. If you had 500gigs of assetbundles (custom unity assets) it would matter that much.
