before I buy a replacement quest 3 controller, I wanted to check if there is a plugin or work around to basically control Vam in VR without using the left stick? Something like holding left grip makes right stick act like left stick?

I only use VAM with one controller, where on mine pressing the joystick button allows you to grab the world to move around.

While I don't have a Quest 3, I have a Pico 4, I would expect it to be the same controller behaviour if the Quest Joystick has a button function when pressed.
No configuration was needed, it's like that by default on VD or SteamVR.

Used to have a HP Reverb G2 and it was the same.

thanks for the responses, will try out soon

updating to say moving this way does work for quest 3 using virtual desktop. It's weird to get used, and I'll have to rethink my room layout, but this is an a+ tip for one handed control.

Make sure you assign the UI Assist plugin to be on the hand that has the single controller in use, not the "joystick" ;)
