Question How do I hide ui elements while in VR?

In desktop mode, I press T to display/hide the elements. But how can I do that in VR?

Also, I can't find what are the keyboard default keybindings anywhere. Could you point me where to go?

And finally, do you guys recommend any plugins or configuration settings for a better VR experience?

In VR you press and hold one of the buttons your controller uses to show the control points. Naturally, only in Edit mode.

The main key shortcuts are shown in the UI, like "Play (P)". You can explore the wiki to see more.
