In the starting UI under scenes is there a way to put all of them into different folders? Would be nice to put all the sfw stuff in one folder and all the nsfw in another. Also then I could have a project folder. There is so many scenes at the moment I know I can search for certain ones but it's all jumbled up.

No, but you can try using the Browser Assist plugin for more control over the Scene Browser

In order to really keep some things SFW, you should probably keep a separate install of Vam for that. If there's nothing NSFW in the other install, then no browser changes are needed. As long as you start Vam in the SFW install, that's all you'll see.
