I downloaded a scene, how do I set the door to be open or closed?

If there's no script to do that, you can't.

You may be able to remove the door with this plugin (if it's a listed option.) You could then add the "iscube" shape and scale it to make a new door and parent it to an "empty" to act as the hinge point to animate it opening and closing.
