You can also just rename the steamvr folder to anything else in the steam install's common-folder.
Then you can start vam by clicking vam button in oculus, and it won't use steamvr, because it thinks it is uninstalled.

Thanks for the review. Most of us still need steamvr to function properly for other games and apps, so I don't advice renaming your steamvr folder, unless you purely only want to do this with VAM
