I'm having trouble making the floor white like in The Matrix. I only create floors with pre-made textures, and I can't find anywhere how to change the floor to, say, white.

If you just want to use the WoodPanel, you can change some settings under the "Params" tab to get a white color. The WoodPanel has textures already built in, so they don't appear under the "Textures" tab (else you would have been able to delete them there).

But you can change the texture offsets, see this example image (specular texture offset, diffuse texture offset and diffuse bumpiness):

You could also just add an ISCube which has no textures built in, and then just change every side color to your taste, then scale it:

If you want to create a white texture, you could just use Paint or Gimp to create a white image (just a new image, it is already white, export it), then assign it under the "Textures" tab of the Woodpanel. You must assign it at least to the _MainTex and _BumpMap slots. Here is one quick and dirty that you can download:
