You can continue to switch between monitor and headset without reloading the scene. But when the eyes go weird, its just a reminder I forgot to turn off the monitor focus again :) Glad you got it sorted!

There is a plugin I use called 'Real Gaze' This will include head and body movement to look at and away from the target (look-target or player)

Can also take a look in the 'Package Manager' .. I just removed a bunch as well. (Can delete directly in-game)
