How could I make a model that looks like this kind of doll? Any pre-existing similar looking models or creators that make/have made models akin to this? Is there any resource that could be used to make a "Ball-jointed doll" style look?

You could sculpt your own morphs or create a standalone clothing set. Both parts would require knowledge and the will to learn these kind of things. For small details believable texture work could also be enough through a normal map (for creases etc.).

For example this is a skeleton as separate clothing items. You would hide the normal body then with a transparency plugin:


I have made a quick and dirty morph example, it is bad, but show the principle. Notice that you can't increase the polygon count so sculpting fine details will be quite "interesting". There are extreme morphs for something like a bat head though, so i guess it would be possible in some way.

Someone was making ball joint morphs a few months ago but seems they haven't completed working on it. S p l i n e VR has a doll skin texture maybe that can work.
I'm guessing maybe this model from mopedlampe could work if the character parts are clothing items and you can recolour and mix and match... that's the closest I can think of in getting the doll body.
